Product Description

Succinylated Monoglyceride(SMG) is a white or light beige powder. Its melting point is about 50 ºC. It is insoluble in cold water, but can be dispersed in hot water and hot grease. It has the functions of emulsifying, dispersing, conditioning and controlling fat accumulation. Fat aggregation can strongly interact with gluten in flour, so this product can be used as an excellent dough conditioner and bread core softener to improve the characteristics of fermented dough and increase the volume and elasticity of bread. In addition, the product can also be used for fruit and vegetable drinks, protein drinks, solid drinks and Lactobacillus drinks due to its good emulsifying property. It can also be used for shortening and whipped cream.
